At Thomas Towers there’s nothing we love more than creating wedding menus that are a little different. We love it when a couple comes along who wants to do something creative and are open to all our crazy ideas. As soon as we met Lauren and Matt we knew we’d create something magical. If was a dream to design their bespoke wedding catering East Midlands.
Lauren and Matt are real foodies and were open to exploring a variety flavours and dishes. They had a rough idea of what they thought their wedding menu should look like but as we dug into the detail we realised this was influenced by what they thought their guests would expect to eat. When asked what they’d have if it was just the two of them, the answer was ‘BBQ style fried chicken with fries and slaw’ but they couldn’t have that on their wedding day…..could they?
Yes! They could indeed have that as their main course. All eyes and taste buds lit up as we started to pull together an American Pit BBQ inspired main course with yummy fried chicken and all the usual suspects – served on funky little trays for extra awesomeness.
A Cracker of a Menu
Canapes were mini versions of some of their favourite meals including fish and chips and shepherds pie. Celebrating some British classics before that epic USA inspired main course. We added a sprinkle of South America with a tacotastic starter. A trio of tacos featuring the ‘Ribinator’ – an awesome mash up of Pork Belly, Cheek and Ham Hock! In a taco! Seriously, this menu was bespoke wedding catering at it’s very best.
Question: When you love so many puddings where do you start picking just one?
Answer: You don’t! Lauren and Matt had sharing boards filled with a variety of delicious desserts for guests to tuck into whatever they fancied. Spoiler alert – they fancied everything. It all went down an absolute treat.
Evening snacks were veggie pasties, perfect for late night munchies after a glass or five of fizz and some serious shape throwing on the dancefloor.

The Verdict
So what did the lovely couple have to say about their wedding menu?
“From the moment we chatted with Thomas and Lynsey at TTC, we knew that we wanted to book them for our wedding.
Thomas himself is so energetic, engaging and creative. He was able to take our muddle of ideas and turn it into a menu that we, and our guests, absolutely loved! We knew we wanted the more traditional plated course-style menu, but with a casual twist.
The end result was better than we could have ever imagined when we first started thinking about our catering options; a trio of tacos as our starter, an incredible fried chicken, mac and cheese, fries, pickles, slaw, burnt ends and corn ribs main, and a sharing dessert board of warm donuts, brownies, lemon meringue and profiteroles! It was SO delicious, and we were so excited to serve this to our guests, and to tuck into it ourselves, too!
Lynsey was absolutely fantastic to deal with. She took our ever-changing number of guests, courses, and dishes in her stride and was always so enthusiastic, polite and professional. A dream to work with – thank you so much for you patience!
Leading up to, and on the day, Callum and his team ran the show perfectly. Communication was excellent and the timings were all just spot on. My husband and I were chatting with a few guests when our mains were brought out – which Callum and his team picked up on so they whisked ours away to keep it warm while we made our way back to our seats!
